NOLA: Beignets

The Big Guy asked for beignets for Father's Day and I tried a recipe
from NewOrleansonline. It is much easier, does not involve yeast and
makes (to my mind) a VERY respectable product. It is a quick and tasty
batter-based recipe. Recently I have been using cast iron
exclusively for deep frying and I get much better results, and you for
sure need a thermometer because the oil should be just a tad above 370
degrees -- the oil should be hot enough to cause rapid air expansion
but not too hot so as to make a crust too thick too quickly to prevent
increasing the size. Really -- drop by TEAspoons because more batter
will take to long to cook. They blow up to about the small sizes from
Cafe Du Monde's. And somewhere in the deep recesses of my failing
memory is seeing the CDM people on TV poking or slicing them in the
deep fryer to split the crust. That seems to work fine.

They came up very light and airy, and were very easy -- no yeast, no
cutting and resting. I was very pleased.
